Makes 10 muffins: - 1 large zucchini - 4 apples - 2 cups of ground almonds - 1 cup of buckwheat or brown rice flour - ¼ of a cup of almond milk - 1 tablespoon of coconut oil - 1/4 cup coconut nectar

1/4 cup coconut palm sugar mixed with a bit of water to create a liquidy consistancy - 3 dates - 1 tablespoon of cinnamon - 1 teaspoon of vanilla essence or vanilla extract

For the oaty topping - 1 cup of oats - 1 cup of pecans - ½ a cup of almonds - 4 dates - 1 tablespoon of coconut oil - 2 tablespoons of coconut nectar 
Start by pre-heating the oven to 390° 
Next peel the apples, discard their cores and chop their flesh into small cubes. Then slice the ends of the zucchini and finely grate it using a cheese grater or toss them into the food processor with your grating blade.

Separately, place the almonds into a food processor and blend for a minute or so until a nutty flour forms. Add the apple cubes and grated zucchini into this flour along with all of the remaining ingredients (except for those used for the topping) and blend for a few minutes.

Depending on your muffin containers, you may or may not need oil spray. I use a coconut oil spray from Trader Joes.

Once a smooth muffin mixture has formed spoon it evenly into muffin containers, then place them in the oven for 10 minutes. 
While the muffins cook, make the oaty topping. 
Place all the necessary ingredients into a food processor and blend for 2-3 minutes until a sticky crumble-like mixture forms. It'll taste fantastic as is.

Remove the muffins from the oven after 10 minutes and evenly distribute the oat mixture on top of each one. You want to kind of push down the oaty topping into the muffins so that it doesn't crumble off easily when cutting them. Then place them back into the oven for 20 minutes.

After 20 minutes stick a knife into one to check it comes out clean, if it does then they are cooked. Allow them to cool for about 20 minutes before eating them as they will finish setting during this time. I think they taste best a few hours after cooking. Enjoy.

Because of the world we live in today, our body's voice has gotten muffled out by the noise of marketers, advertisers and chemists telling us what we SHOULD eat. Chemists have literally taken control of our appetites with artificial foods that make us crave and that keep us hungry! ้้้
G-d designed our bodies intricately and perfectly. We know when to eat and what to eat, but we first need to strip away all of the processed crap that makes our internal messages go haywire. ้้้
Your body is your best nutritionist. Every person has a different life, different needs, different sensitivities and I don't believe you can rely on a text book or a set diet for a sustainable solution that will feel right to you forever. ้้้
With that being said, I may or may not have overdone it on chickpea desserts this week. My body feels out of balance and I feel like I just need a lot of fresh, live vegetables. ้้้
This salad is the best kale salad I've had in a while and what I love most about it is that it gets even better after sitting for a while. Cook once - eat twice! I made it for dinner last night, put the rest in the fridge and voila - brunch in 3 minutes!

RECIPE
่่่่่่ Kale & Cabbage Salad

3 bunches organic kale, de-stemmed and torn into bite sized pieces
1/2 head red cabbage, chopped
1/2 cup sliced scallions
1/4 cup to 1 cup of pumpkin seeds
1/4 cup to 1.5 cups of dried cranberries 
I went light on the pumpkin seeds and cranberries, but you can adjust it to your liking. Just toss all of this together in a bowl and add in the dressing until it's mixed well.

Dressing

1/2 cup cashews
3/4 cup water
Juice of 1-2 lemons
1 tablespoon of coconut nectar (you can use honey as an easy alternative) 
2 tablespoons dijon mustard
1/4 cup cold pressed olive oil
Himalayan or sea salt and pepper
Put everything in a high speed blender or food processor and add to your salad. This dressing is fantastical. ้้้้้้้้้้้้้้
