My holiday landlord, whom I refer to as Mr Smoochy Chops, trying to look all serious and stuff.
As a vegan, there were some recipes I accepted as being in the ‘never to make again’ pile. Such as my Nan’s Lemon Meringue Pie 🍋
But that was until the ✨vegan-alchemist-kitchen-wizards✨ discovered that gelatinous liquid from cooked beans can act a lot like egg white. #aquafaba, you little beauty!
So with that, behold my first attempt at veganising Nan’s recipe - I’m so happy to make a cruelty-free version of an old favourite 🐤👍 While this recipe will evolve over time, I made v1.0 for mum today and we both agreed it tasted pretty much as we remember. What a blast from the past!
But the look on mum's face was priceless when I told her what made up the meringue. It’s so funny how 'bean juice' can gross her out...Why can’t I just whip a chicken menstrual cycle like a normal person?!
